Ribeye, shortloin, strip, sirloin, and chuckroll. Aged a minimum of 21 days, no exceptions.
Premium selections of boneless breasts, and whole birds (without giblets).
Bacon & Sausage
Applewood smoked bacon, Big Fork Brand(R) bacon sausage, Italian sausages, and charcuterie.
Additional Berkshire and Duroc offerings of loins (bone-in and boneless), 10-rib racks, 2-up baby backs, tenders, and butts.
Lamb & Veal
Lamb racks, boneless legs (boned, rolled, & tied), and bone-in legs. Milk-fed veal racks, and top round cutlets.
Scottish/Faroe Island salmon fillets, blue crab meat, 6/7 oz Maine lobster tails, and 26-30 shrimp (peeled and de-veined, tail off)
